Undertow subsystem tests use invalid configuration

The undertow subsystem unit tests create a mock byte-buffer-pool capability, something that the subsystem itself is meant to provide.  This means that most, if not all, of the test configurations, against which the undertow subsystem is tested, are invalid.

UPDATE: sure enough - removing this mocked capability causes most of the undertow subsystem tests to fail.
