optaweb-employee-rostering adding a skill to an employee doesn't persist

To reproduce:

• start optaweb-employee-rostering (we need a ./runLocally.sh script btw)
• add a new skill "vaccin injection"
• go to employees, look up "flo jones", give him that new skill, click save
• flo doesn't have that skill afterwards
