Look for "You can modify the default HTTP Session timeout in server/default/deploy/jboss-web.deployer/conf/web.xml for JBoss 4.2.x or later"
Observe that server/default/deploy/jboss-web.deployer/conf/web.xml does not exist in EAP 5.1

The part of the documentation containing:

Is incorrect, server/default/deploy/jboss-web.deployer/conf/web.xml, should be changed to server/default/deployer/jboss-web.deployer/web.xml for EAP 5.1
