Currently v3 projects are displayed like: 'openshift ns:default'
We should modify the labelling to display a projects "display name" or fall back to project "name"

Steps to reproduce:

1. ASSERT make sure that you have a v3 connection in explorer
2. EXEC: Expand a connection and note the projects display like: 'openshift ns:default'

Expected result:
projects should get displayed as the display name if it has one or "openshift"
