Runtime nested collection support

Upstream issue: https://github.com/atlasmap/atlasmap/issues/780

Support symmetric nest level first as it doesn't require special UI.
Then nested<>non-nested mapping could be supported as well without huge UI change.

Otherwise, asymmetric nest level is out of scope. It requires special UI and have to be addressed separately.
