YAML Provider should support POJO binding

The current YAML provider ignores the POJO type passed in, and instead uses the default type mapping for SnakeYAML, which is a Map.

Maybe it wasn't available at the time, but SnakeYAML now supports a loadAs method which can load to a POJO.
