Update one more MANIFEST.MF in SAML Holder-Of-Key Assertion Scenario

As result of JBEAP-3181, there is one more example of MANIFEST-MF in SAML Holder-Of-Key Assertion Scenario chapter which should be updated to contain only necessary info. Please update the example in the same way as JBEAP-3928.
