Use alternative/default bean to allow overriding of the default cache configuration and default cache manager

To allow overriding of the default cache configuration and the default cache manager we need to use alternative/default bean (it's more in the CDI spirit).

Because of SOLDER-112, SOLDER-113 it's not possible to use default beans at the moment but we must use it asap.
