Enable statistics for dist wildfly

By default WF has statistics disabled (eg: for Datasources) which causes the returned values for available, in use, idle connections, etc to be always 0.

The dist should be created with those stats (at least DS, but maybe all wouldn't be bad) enabled so that the values can be gathered without user intervention.

Likely documentation on how to manually enable/disable statistics should be included/referenced in hawkular docs.
