[OCP] Update doc to match in downstream template AMQ_GLOBAL_MAX_SIZE

This is from CLOUD-2544:
Artemis provides GLOBAL_MAX_SIZE. To be consistent with the images, we should be using AMQ_GLOBAL_MAX_SIZE in the templates..
