Update quickstarts that generate openapi docs so that they are discoverable by 3scale

This should be easy, since it they just need to update the FMP version used which will auto add the right service annotations/labels. But I think content type needs to be set to 'application/vnd.oai.openapi+json' for the generated content type, but that needs a slight change in the camel config for the quickstart.

I think zregvart-redhat might have more details about what is needed for that.
