Move source jar maven plugin to prod profile for quickstarts

A sources jar was added to the build for spring-boot-camel-xa and narayana-spring-boot, and this caused the quickstart s2i tests to fail. 

Move the maven-source-plugin to a prod/release profile that is explicitly activated during pnc builds.
