[Operator] Which version should be deployed by default

Continuing of ENTESB-11274 - that the operator shouldn't deploy "latest" images by default, it seems we can't get to an agreement with lgarciaac about what version should be deployed by default by the operator - for example when using minimal cr.

In my opinion the operator version 1.2.3 should deploy all syndesis components of version 1.2.3 by default and it makes no sense to deploy any other version, unless specified manually.

Do we want to let users use "minimal" CR (without specifying tags for images) - if so, what version it should deploy? or do we always want to use the "full" CR where you will specify the tags that will be deployed?
