Implement snapshot select override behavior for MongoDB

The MongoDB connector does not currently implement any snapshot.select.override type of behavior but such behavior could exist where the value of the configuration is a MongoDB filter predicate to be applied to each specific collection much like relational connectors are to be provided a select statement for each table.
